The Paul Ainsworth Academy

By partnering with Truro and Penwith College to establish The Paul Ainsworth Academy, we aim to inspire and support as many people as possible to join this fantastic world of hospitality. Through our apprenticeship programme—combining paid work experience with college study—we’re committed to giving each apprentice the strongest possible start. Working with the outstanding team at this Ofsted-rated college, apprentices also gain hands-on experience alongside us at The Ainsworth Collection, developing skills, confidence, and a deep understanding of the craft.

We know from our own journeys how transformative learning through experience and mentorship can be. Our goal is for every apprentice to share the same passion for ingredients, cooking, and creativity that drives us every day in the kitchen.

Graduate Stories...

Mason Winwood joined us from Truro and Penwith College ten years ago, and is now the head chef of our Michelin-starred restaurant, Paul Ainsworth at No6. Mason has worked his way from catering student to head chef, honing his craft through every section of the kitchen. Working alongside Paul, he leads a brigade of chefs, crafting dishes with the finest ingredients from the UK and beyond. He is also responsible for upholding our Michelin star standards and continually driving No6 forward.

The Ainsworth Collection is about highlighting talent and enabling people to grow, offering controlled responsibility and continuous education. The Paul Ainsworth Academy was established to work with the excellent tutors and facilities at Truro and Penwith College to nurture talent, and it’s success rate speaks for itself.

Mason is a shining example of how a passion for cooking and hospitality offers real career opportunities.

Issy West started her cooking career by joining Truro and Penwith College in September 2021 and from there she entered The Paul Ainsworth Academy. Issy spent her apprenticeship at Caffè Rojano, learning her craft 4 days a week in the restaurant kitchen, and 1 day a week studying.

Issy showed a true passion for cooking during her apprenticeship, but what she loved most was being part of the team and taking part in The Ainsworth Collection’s external events, including Pub in the Park, an event championing leadership and sustainability for McLaren, Deloitte and Google, and an unforgettable trip to New York!

After rising from Chef de Partie to Head Chef at Caffè Rojano, Issy has now left to travel the world. Her journey has been one of talent, dedication, and passion — truly inspiring.

Loren Cooper joined Truro and Penwith College’s Food and Beverage apprenticeship scheme in November 2018. She heard about The Paul Ainsworth Academy and switched her apprenticeship to Caffè Rojano, completing her apprenticeship with us in 2020.

In 2021, Loren was given the opportunity to join our Michelin-star restaurant, Paul Ainsworth at No6, helping to host our guests on The Chef’s Table. Tasked with delivering our guests’ wine flights, Loren discovered a real passion for wine and has just taken her Wine & Spirit Education Training Level 3 course.

Loren says the things about being an Academy student she loved were the ability to learn independently, being supported in a work environment, and putting her learning into action every day.

Loren is now our F&B Director and Sommelier at No6. She works alongside our Head Sommelier and Operations Director, Liam Evans, selecting the wines for our Michelin-star restaurant. Loren has a bright future ahead of her.
